Preheat your oven to 350 degrees.
Line a baking sheet with parchment paper.
2 1/2 cups super-fine almond flour
1/2 teaspoon fine sea salt
1/2 teaspoon baking soda
1/2 cup butter, melted
3/8 cup 100% real maple syrup
2 teaspoons vanilla (the real stuff)
1 cup walnuts, chopped
1 cup 69% cocao chips
Combine the almond flour, sea salt, and baking soda, stir together. Beat the egg with a fork, then stir in the melted (cooled) butter, maple syrup, and vanilla. Combine the wet ingredients and dry ingredients Do not overmix. Add in the walnuts and cocao chips.
Form the dough into about 28 balls and place on parchment lined cookie sheet, flatten slightly. Or, you can make it easy and make drop cookies.
Bake for 19 to 22 minutes. 21 minutes seems to be the sweet spot for my cookies.
3/4 cup of fruit sweetened dried cranberries makes a great addition to this cookie. Experiment with your favorite add-ins.
