Honey Mustard, Kale, and Rosemary Chicken

Ingredients

• 1/2 cup grainy mustard, or dijon—or go wild and use half of each.

• 1/4 cup honey or maple syrup

• 1 small onion, diced

• 2 or 3 garlic cloves, minced

• 2 fresh rosemary sprigs—strip rosemary from the stem

• 6-8 boneless, skinless chicken thighs

• Ghee 

• 1 bunch of kale, strip from the stem, roll the leaves together and cut into thin strips (or chop the kale, or keep the kale leaves whole—it’s entirely up to you). Swiss chard works well in this recipe as well. 


Step 1: Combine the mustard and the honey (or maple syrup) and set it aside.


Step 2: In an oven-proof pan, sauté the onion in ghee for a couple of minutes and then add 2 or 3 minced garlic cloves. Don’t add the garlic too soon, or it will brown and get bitter. Push the onion mixture aside and brown the chicken on both sides…add a bit more ghee, if necessary. 


If you want to add greens to your diet (I know you do!) go to step 3. If you haven’t wholly embraced cooked greens yet, skip step 3.

Directions

Step 1: Combine the mustard and the honey (or maple syrup) and set it aside.


Step 2: In an oven-proof pan, sauté the onion in ghee for a couple of minutes and then add 2 or 3 minced garlic cloves. Don’t add the garlic too soon, or it will brown and get bitter. Push the onion mixture aside and brown the chicken on both sides…add a bit more ghee, if necessary. 

If you want to add greens to your diet (I know you do!) go to step 3. If you haven’t wholly embraced cooked greens yet, skip step 3.

Step 3: Remove the chicken from the pan and stir in chopped kale or, swiss chard. Cook the greens a few minutes. Salt and pepper to taste. Place the chicken on top of the cooked greens in the same pan.

Step 4: Pour the honey and mustard mixture over the chicken and sprinkle with the rosemary. 

Step 5: Bake covered at 400 degrees for 15 minutes. Remove the lid and baste the chicken with the honey mustard sauce in the pan and cook uncovered with an additional 10 to 20 minutes (depending on the type of chicken you used) or until done. 


Notes

Add a salad or a side of quinoa and enjoy.
